Savory Herb Gluten-Free Breakfast Muffins

Savory gluten-free breakfast muffins: a fantastic option for when you’re short on time or need something portable. We’re so used to grabbing sweet things in the morning – and believe me, I’m no stranger to this – yet savory breakfasts are common in most areas of the world, plus they often allow us to gobble more vegetables and protein.

I espouse the virtues of savory breakfasts so much I feel like a broken record here, but I’m still going to repeat how awesome they are. Savory muffins are particularly awesome because they are convenient, tasty, customizable and easily carried in a purse, lunchbox or bag. They’re also ideal for batch cooking and freezing.

You won’t get bored with this recipe if you change up the herbs (it’s a great way to use up those fronds before they wilt) and chopped greens work well in here, too. If you’re looking for a boost of protein, try folding in extra seeds or nuts, cooked beans, or finely chopped tofu or tempeh. These muffins are delicious on their own or, if you have some extra time in the morning, slather them up with coconut oil, nut/seed butter (tahini would be great!) or ghee.

The health benefits of these muffins are nothing to sneeze at, either. Chickpea flour is rich in protein and fibre, and sesame seeds are a fantastic source of plant-based, bioavailable calcium. Most herbs have anti-inflammatory properties, so whatever you choose it’s likely that you’ll receive the anti-inflammatory benefits as well as an array of minerals like iron and calcium.
